We decided to skip out on packing a big lunch and go with a snack since we were going to get there right around lunch and would have time before the 1:35 first pitch. We went with peanut butter oatmeal balls. Peanut butter, flax seed, oatmeal, chocolate chips, and honey. Couldn’t be easier to make, you just mix everything together in a bowl and then roll it into a ball and let it get cool in the fridge. You might have to put it n the fridge for a little to set up before you start rolling them out into balls.
We decided that we were going to do a bar or ball type of snack because we try not to stop to eat when we can and these were the perfect snack for the cooler. We just used one suggested serving for each ingredient on the nutrition facts and mixed them together and came out with a dozen pretty good sized snack bites. They also held up well in the cooler and were just a firm and delicious on the drive home as they were on the drive there!
The Pirates won and it was sunny and over 70 degrees, can’t ask for much more than that! Definitely try out these and these overnight oats perfect for breakfast on the go every morning, not just for the trip!
